MAKE THE VANILLA SABLÃ TART SHELL
Make the dough: In a large bowl, combine the all-purpose flour, powdered sugar, cornstarch, salt, and vanilla seeds (or extract). Add the butter and mix with your hands until combined and the butter pieces are the size of tiny peas. (You can also use a stand mixer with the paddle attachment or a hand mixer here.) Add the egg and mix with a rubber spatula until fully incorporated and smooth. Do not overmix.
Chill the dough: Remove the dough from the bowl, gently shape it into a ball, and cover with plastic wrap. Flatten into a disc with your hands, then refrigerate for about 30 minutes, until the dough is cold but still pliable (think: texture of clay).* As the dough is chilling, make the financier batter.
